    Once a rice farmer said sadly in his dialect, “Why do you have to polish so much of the rice that I grew with a great deal of love?” He motivated Watanabe Sake Brewing to continue the study of brewing “sake that is friendly to farmers, rice, and the environment.” The Chinese character for rice originated from the fact that there are 88 labor processes involved in growing rice. Therefore, mindful of the ancestor’s words to “Never waste rice, even a grain,” Watanabe Sake Brewing has produced Japanese sake without polishing the rice. You will enjoy the umami of the rice itself spreading gradually through the mouth.
