”YAMAKAWA JOZO" is a soy sauce brewery. Since 1943, we have been brewing a type of soy sauce called “tamari.” Tamari soy sauce is often used for sushi, sashimi and stewed dishes.
Tamari soy sauce is made with carefully selected soy beans, wheat and salt, and we use the clear river-bed water from Nagara River. Today we still practice the traditional technique of brewing soy sauce in cedar barrels for a long period. Tamari soy sauce made by devoted master brewers is thick, fragrant and truly tasteful. We believe that “the real thing is tasty,” and our products have been the beloved soy sauce by a large number of cooks for a very long time.
