This Junmai Daiginjo is named after our toji's name (our master brewer's name) in charge of sake brewing at Funasaka Shuzoten. This sake is made using Yamada Nishiki rice from Hyogo Prefecture, with a polishing ratio set at 50%. Striving for a fruity, sweet, and gentle profile, we aimed to fully experience the 'umami' inherent in the rice.
It is significant to registor our toji's name as a brand. The essence of Funasaka Shuzoten lies in placing great importance on the 'umami' of Japanese sake.
