Our business was founded in Gifu Prefecture, Japan in 1877.
We make a traditional Japanese dish called “Tsukudani”. “Tsukudani” is small seafood, meat or seaweed that has been simmered in soy sauce and sugar. “Tsukudani” can be made with Ayu also known as sweetfish, an excellent fish that can naturally flourish only in clean rivers such as the Nagara River, one of the most beautiful rivers in Japan. For this reason, Ayu has been has been known as “The Queen of limpid stream” for a long time.
You can enjoy and experience the heart and soul of Japan through Ayu cuisine…that is “Umaiya.”
