Our business was founded in Gifu Prefecture, Japan in 1877.
We make a traditional Japanese dish called “Tsukudani”. “Tsukudani” is small seafood, meat or seaweed that has been simmered in soy sauce and sugar. “Tsukudani” can be made with Ayu, also known as sweetfish. Ayu is an excellent fish that can only naturally thrive in clean rivers such as the Nagara River, which is one of the most beautiful rivers in Japan. For this reason, Ayu has been known as “The Queen of limpid stream” for a long time.
You can enjoy and experience the wonderful Japanese food culture and the spirit through Ayu cuisine…that is “Umaiya.”
